They quickly dismiss their errors, and therefore, cannot reflect upon their real skill. Of course, a person only plays as well as they do play, not as well as they can play. Many players walk around, distorting in their minds how well they can play, and then, do not even play as well as that.
The key to using someone's egotism to evaluate their likely skill is this simple fact: At the highest level of technical skill, there is not room for denial or delusion. Poker is quite complicated. If some form of mental rationalization takes precedence over raw evaluation of theoretical strategies, the player cannot be that good.
I am not encouraging delving into conversations about poker theory at the table to discover how deeply your opponent has considered the game. In fact, I would discourage doing this. It is also not beneficial to ask someone how well he plays poker.
If you were to ask someone while they were playing, the influence of other players sitting at the table would probably distort their answer for all but the most honest of self-evaluators.
However, if you take the opportunity to observe and listen, your opponents will likely give you all the clues you need to discover how good they are versus how good they think they are. Then, you can extrapolate how well they think that you play. An egotistical person is less likely to give another person credit for playing poker well.
